Wellness Wednesday: Quick Comfort Foods

Is it just me or does it seem like fall is crazy no matter who you are? Students start classes again, kids go back to school and back into extracurricular activities. For those of us that are working stiffs, fall marks the beginning of the fourth quarter of the fiscal year, and the signal to start packing in as many positives as possible for year-end reviews. We could all use a little quick comfort as the days get darker and the long road to the end of the year starts to feel uphill, but that doesn’t mean that you have to sacrifice your nutrition to get it! This week, we’re bringing you a few feel good foods for the fall that wont add hours to your day or inches to your waistline. Enjoy!

1.       Spaghetti and Meatballs

I’m not Italian, but there’s something just so soothing about a good dish of red cause, meatballs and noodles that seems to melt my cares away, but the prep seemingly takes forever! This recipe however, throws the sauce into the slow cooker and subs in veggie noodles for less calories and more fiber.

2.       Apple Pie Slow Cooker Oats

Apple pie for breakfast? Don’t mind if I do! This recipe is low in sugar, full of fiber and is one reason you might actually get out of bed on time when it’s gray outside. Start it at night to wake up to a delicious, pie scented house.

3.       Chunky Monkey Trail Mix

Did you know you could make trail mix in a crock pot? Yeah, me neither. Not only is this novel recipe super easy, but the flavor profile is similar to the popular Ben & Jerry’s flavor of the same name. Bananas, nuts, chocolate, what’s not to like?
