Yay!!!! It’s summer!!!! Summer means different things to different people, but after a long and rainy spring, I have no doubt that you are ready to get out and enjoy the nice weather and NOT spend your free days and evenings inside, meal prepping over a hot stove. But just because you don’t want to sweat your face off or spend a whole day meal prepping doesn’t mean you have to give up eating healthfully. This week, I am sharing some of my favorite quick-and-easy hot weather recipes, so you can get in your prep and then get outside.
Got leftover chicken? Make your leftovers work double hard by incorporating leftover chicken into a tasty, zingy, curried chicken salad. No leftovers? No problem. Grab a rotisserie chicken and shred it up.
Summer is grilling season, so why turn on the oven if you don’t have to! Take it outside! Pair this with a nice green salad to round out the meal.
